This week I've been having some great fun experimenting with making a new recipe and roasting every veg in sight. Early in the week, baby and I had lunch and PCC and I fell in love with their broccoli waldorf salad. Decided to copy it!
3c broccoli - chopped up in small pieces and blanched first. In bowl mix together: 3tbls low fat veganaise (or non fat mayo). 1tsp safflower oil. 2tsp tapioca starch. 1/2tsp apple cider vinegar. 1tbls olive oil. 1tsp flax seed oil. pinch of seasalt (or kosher). 1tbls agave syrup. squirt of lemon juice. mix this sauce together until very smooth, then add broccoli. 1 1/2c cherry tomatoes. 1c raisins. 1/2c chopped red onion. 1/2c sunflower seeds.
Their ingredient list also mentioned xanthan gum, crystalized cane juice (sugar) and red wine vinegar (Didn't have any, will add next time). I didn't use these last 3 ingredients and it didn't need it. It was just so delicious, I ate it all myself in two days. Yum :)
I also did just a bunch of yummy roast veg, steamed asparagus, short grain brown rice and fried tofu. yummy and filling. A bit of black bean/garlic sauce for dipping...
I have an acorn squash and a spaghetti squash to cook up next week!
Weight lost this week: 2lbs
Exercise (I can finally spell this word correctly) gym, walk and a bit of a jog. Still planning to get more in!
This week started with a two day anniversary trip to the Bavarian tourist village of Leavenworth, so fun! But also, not great for my diet. I was on vacation, so was my diet. I didn't do too badly, didn't go crazy on wurst, giant pretzels and beer, but there were a few naughty things (cinnamon roll, m&m's) we won't mention here.
Anyway! Back on the diet and the hubs has been doing some yummy cooking as well! He did roasted red peppers on the bbq, amazing! Added to rice, beans, roasted egg plant, shaved corn off the cob and edamame.
This week branched out from the rice and quinoa and added grilled polenta and falafel! Did the sliced polenta on the Forman grill, easy! Added a bit of vegan chili (made by the hubs) to the polenta and had a mixed salad on the side. I'm Loving blueberries in salad these days!
Weight lost this week: 5lbs! (2 of those I'm sure were water weight from last week!)
Exercise: 2 long, brisk walks, but no gym trips yet this week.
I'm watching Project Runway on demand as last night I met up with Tina (from Glamspoon) & Kim (from Kimmi Designs) to check out Fashion First runway show. It is a charity fashion show event that has been going for 9 years and is one of the most fashionable event in Seattle. So, photos like this of me (far left) really put a fire under my butt to loose weight and stick to my diet!
This week I've tried, failed and tried again with Kale. It's such a beautiful veg, until you cook it. Steaming it, yuck. I tried a red onion/ brown rice/ kale steamed thing, again, yuck. But took that mixture and added it to tofu, stir fried it with soy sauce. Success, yum!
My friend Naomi (The Taste Traveler) gave me a good tip for working with Kale. Brush with olive oil, add salt & pepper and roast until crispy. Then, crunch up and sprinkle over rice. Crisp it up! I'm trying that next.
Ate a lot of salads this week (which I love) and did pretty good, except for letting myself have a few bites of chocolate. Sometimes, it's just necessary!
Weight lost this week: Scale at home: 0 lbs. Scale at the gym: 2 lbs (so we'll go with that one :)
Exercise: 2 trips to the gym (with one scheduled for tomorrow) and a long walk.
Challenge next week: drink more water, eat less nuts and oil. More exercise.
