This week started with a two day anniversary trip to the Bavarian tourist village of Leavenworth, so fun! But also, not great for my diet. I was on vacation, so was my diet. I didn't do too badly, didn't go crazy on wurst, giant pretzels and beer, but there were a few naughty things (cinnamon roll, m&m's) we won't mention here.
Anyway! Back on the diet and the hubs has been doing some yummy cooking as well! He did roasted red peppers on the bbq, amazing! Added to rice, beans, roasted egg plant, shaved corn off the cob and edamame.
This week branched out from the rice and quinoa and added grilled polenta and falafel! Did the sliced polenta on the Forman grill, easy! Added a bit of vegan chili (made by the hubs) to the polenta and had a mixed salad on the side. I'm Loving blueberries in salad these days!
Falafel with a few sliced potatoes and a mixed salad, super yum! Just used a balsamic as a dipping sauce.
Weight lost this week: 5lbs! (2 of those I'm sure were water weight from last week!)
Exercise: 2 long, brisk walks, but no gym trips yet this week.
